I'm a slacker...

I've been slacking. I made coconut bacon but I used the wrong measuring spoon for one of the measurements. Tried to fix it, but I'll have to try again so it's right. Also, I could only find the small shredded coconut. Charles was not a huge fan. 

I made lemon poppyseed muffins from mix. They were pretty tasty (though not vegan) and 160 calories each. And about the only thing interesting I've made lately. 


Oh man, vegan cheese. That sounds amazing. The kinds from the store are pure crap.  

It's getting cold now, so the time for soups is upon us. I made normal recipe potato soup the other day. It was pretty tasty.

I have got to try those cookies, Liz!  They look incredible.   My new addiction--coconut bacon.  I found the recipe here--http://www.eatingbirdfood.com/2013/07/omg-coconut-bacon-vegan-bacon-stuffed-dates/.
It is surprisingly bacon flavored for being unsweetened coconut flakes.

I wish I could show you a picture but it keeps getting eaten too fast.  Alex even likes it.

So I totally went on hiatus with work being super busy.  However, now work has quieted (at least last night) and so I am back on the trail for yummy vegan food.
I have rejuvelac brewing so that I can try to make some vegan cheese as I just got a cookbook devoted to vegan cheese.  I have gotten all the supplies that I needed in the mail and now.. just have to wait for the quinoa sprouts to give up the rejuvelac, the soy yogurt to thicken and hopefully next time I post I will be able to show some pictures of smoked vegan gouda!

Banana oatmeal 'cookies'

was searching for a way to get rid of some overripe bananas when I stumbled upon http://www.bionicbites.com/2013/04/banana-oatmeal-cookies/. I had most everything on hand, so I figured I'd give it a shot. I used 3 medium-large bananas and had to add a bit more oats, left out the walnuts because I didn't have any, and added in cherry flavored Craisins. It was amazingly simple (even for me) and ended up being a hit. 

You just mash together spices, bananas and oats, then add the extras. 
I ended up with 18 cookies that took the time in the recipe to cook. Here they are finished:
Charles kept eating them and even took some to work! Next time, I think I'll add more cinnamon. 

My work week started today (ugh), so there likely won't be much awesome cooking for a few days. But until then - check out this huge 'Super Sauce' tomato from my garden. It weighed a bit over a pound!

Greetings from the future.  Thunder Ramen is great but even better is our wonderful produce that makes it easy to eat (mostly) a whole foods plant based diet.   I just had a delicious albeit overripe pear that was most likely produced right here in northern Japan.  We have a ton of apples which all three of my beautiful boys love to sink their teeth into.   Last night I made a kale/walnut/pasta recipe that even my eldest picky son loved.   I am enjoying experimenting with different recipes and even though my tongue wishes that tofu yogurt tasted like (dairy)  yogurt and that cheeze tasted like cheese, my husband and I are trying our best to be weekday vegans.  Most of the foods are delightful once I give up the expectation that it is going to taste like its animal flesh equivalent.   Gotta run-have to drink coffee and preclean prior to the mamasan arrival.
